Baking with Neem – Neem Honey Ginger Cookies

An amazing and delicious way to include neem in your diet is to use neem honey! Not only could you put it on toast, in your tea, or on pancakes and waffles, but you can also cook with it! Neem honey is collected from bees that have eaten from neem flowers, drawing on the beneficial pollen. What are the benefits? Since it’s sourced from neem flowers, it contains antioxidants, works as an anti-inflammatory, soothes sore throats and helps with coughing, and is also helpful in lowering high blood pressure!

Ingredients:

2 cups flour
1 tbsp ground ginger
2 tsp baking soda
1/8 tsp baking soda
1/4 tsp ground cloves

1/2 cup butter, divided
3/4 cup sugar
1/4 cup NEEM HONEY
1 egg
1 tsp vanilla

Directions:

Preheat oven to 350ºF.
Combine dry ingredients.

Beat butter until it’s smooth, then slowly stir in the sugar until the mixture is light and fluffy. Beat in honey, egg, and vanilla. Then gradually add the flour once the mixture is fluffy until it is combined.

Shape the dough in 1-inch balls and place on cookie sheets. Bake for 10 minutes and let cool.
